Helpful Tips Before You Start

These tips will help you get better texture and flavor when cooking with eggs and cottage cheese.

Blend the Cottage Cheese

Blending cottage cheese first removes lumps and creates a smoother base for scrambles or casseroles.

Drain It Well

Place cottage cheese in a fine strainer for a few minutes to remove extra liquid and keep dishes from turning soggy.

Season Generously

Cottage cheese is mild, so add extra salt, pepper, garlic powder, or fresh herbs to balance the savory flavors.

Mix at the Right Time

Stir cottage cheese into eggs just before cooking to maintain distinct curds and avoid a watery pan.

Poached Eggs over Cottage Cheese Grits with Roasted Mushrooms

This recipe turns basic grits into a creamy, high-protein base by stirring in cottage cheese. Roasted mushrooms bring an earthy contrast that balances the mild grits and runny yolks from the poached eggs.

It works well for a weekend breakfast or any morning when you want something savory and filling without much hands-on time. The textures stay distinct, with soft grits, crisp-edged mushrooms, and tender eggs.

Poached Eggs over Cottage Cheese Grits with Roasted Mushrooms

Serves 4 people.

Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 2 cups cottage cheese, divided
  • 1 lb cremini mushrooms, quartered
  • 3 tablespoons olive oil
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper, divided
  • 8 large eggs

Instructions

  1. Preheat the oven to 425°F. Toss the quartered mushrooms with 2 tablespoons olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper on a baking sheet. Roast for 20 minutes until the edges brown.
  2. While the mushrooms roast, bring 4 cups water and the remaining ½ teaspoon salt to a boil in a saucepan. Stir in the grits, reduce heat to low, and cook for 15 to 20 minutes, stirring often until thick.
  3. Blend 1 cup cottage cheese until smooth. Stir the blended cottage cheese into the cooked grits along with the remaining ¼ teaspoon black pepper. Keep warm.
  4. Fill a large pot with 3 inches of water and bring to a gentle simmer. Crack each egg into a small cup and slide it into the water. Poach for 3 to 4 minutes until the whites set but yolks remain soft. Remove with a slotted spoon.
  5. Divide the grits among four bowls. Top each with roasted mushrooms, two poached eggs, and a spoonful of the remaining cottage cheese.

Extra Tips

Use low-fat cottage cheese if you want to keep the grits lighter while still adding plenty of protein. The mushrooms can be roasted ahead and reheated in the same pan as the grits finish cooking. Hi, I’m Andrea. I’ve always loved the way art can make faith feel even more personal and beautiful. What started as a quiet creative outlet slowly turned into a real love for painting ideas inspired by Scripture, Christian themes, peaceful colors, and meaningful moments. I enjoy sharing simple and beautiful painting inspiration that feels uplifting, approachable, and full of heart. A lot of the ideas I save and create are made for everyday women who just want something calming, creative, and faith-centered to work on. Some projects are simple enough for beginners, while others are a little more detailed, but the goal is always the same... to create art that feels peaceful, encouraging, and worth displaying. Over time I also plan to share more painting inspiration beyond faith-based ideas, but this little corner will always have a soft spot for biblical and Christian creativity.
