Instructions

  1. Preheat the oven to 400 degrees F. Spread the diced sweet potatoes, onion, and red bell pepper on a large baking sheet.
  2. Drizzle with olive oil and sprinkle with smoked paprika, salt, and black pepper. Toss everything to coat evenly.
  3. Roast for 20 to 25 minutes until the sweet potatoes are tender and starting to brown at the edges.
  4. Use a spoon to make four wells in the hash. Crack one egg into each well.
  5. Return the pan to the oven and bake for 8 to 10 minutes until the egg whites are set but the yolks are still slightly soft.
  6. Stir the Greek yogurt and lemon juice together in a small bowl until smooth.
  7. Drizzle the yogurt mixture over the hash and finish with the chopped parsley.

Extra Tips

Roast the vegetables in a single layer so they brown instead of steam. Thin the yogurt with a teaspoon of water if it seems too thick to drizzle.
