  • 1 tablespoon sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup Thai basil leaves, loosely packed
  • 1 lime, juiced
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Place the rinsed quinoa in a medium saucepan with 2 cups water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the cubed tofu and cook for 6 to 8 minutes, turning occasionally, until the edges turn golden.
  3. Add the diced onion, sliced red bell pepper, and minced garlic to the skillet. Cook for 4 minutes, stirring often, until the vegetables soften slightly.
  4. Pour the tamari over the tofu and vegetables. Stir in the red pepper flakes and cook for 1 minute more.
  5. Turn off the heat and fold in the Thai basil leaves until they just wilt. Stir the lime juice into the quinoa, then divide the quinoa among four bowls and top each with the tofu stir-fry.

Extra Tips

Add the basil right at the end so it stays fragrant instead of turning dull. Leftovers keep well in the fridge for three days and reheat best in a skillet with a splash of water to loosen the quinoa.
